The Great Canadian Baking Show Season 4 “Fancy Desserts” Recap

It is the semi-finals and we are down to Mahathi, Tanner, Maggie and Raufikat. Who will be our final three? If you asked me if I thought these four would be in the semi-finals, I would have said no way. My money on at least one of them making it to the finals is Raufikat. Raufikat has been the most consistent baker all season except for the one week where she faltered for a bit. 

Signature Bake

The Bake: 12 mini entremets

The Time: 3 hours

What I would bake: Strawberry shortcake entremes with a vanilla sponge, pink champagne jelly, strawberry mousse and chocolate panna cotta

What the contestants baked and judges thoughts:

Tanner’s entremets has very summer-like flavours that I like. And you have to love Raufikat. She is such a team player, always helping others and she has been that way since the very first episode. 

Tanner: Southern Charm Entremets with vanilla panna cotta, peach-bourbon jelly and peach mousse. Bruno called the decoration simple but it cut nicely. Kyla loves the bourbon and the flavours are not over powering. 

Maggie: Summer Strawberry Entremets with pistachio cake, lime-basil jelly and strawberry mousse. Bruno noted that the entremets were not shaped evenly. Kyla liked the jelly layer and that it enhanced the strawberry. 

Raufikat: Choco-Orange Entremets with chocolate sponge, dark chocolate mousse, pecan praline and orange cream jelly. Kyla loved the colours and called in inviting. Bruno called the mousse smooth and said the whole thing was well thought out.

Mahathi: Taste of Thailand Entremets with coconut sponge, lemongrass mousse, mango cremeux and lime jelly. Bruno liked the shine of the glaze and like the lime jelly. Kyla wanted more lemongrass flavour but both liked the sponge. 

Technical Bake

The Bake: Chocolate Passion Charlotte Cake

The Time: 2 hours and 15 minutes

How I would have fared: This dessert looks delicious but the components definitely looks complex. I would definitely run out of time for this hence failure on this. I don’t think I would attempt this as I don’t think I can find sheets of gelatin and also passionfruit.

The Bake: The Meringue Crunch Cake

The Time: 3 hours and 30 minutes

What I would bake: Chinese Cake Meringue Crunch Cake with mango curd and buttercream and filled with fruits you would find in a Chinese cake like kiwis, strawberries, honeydew and cantelope. The meringue would have toasted coconuts in it too. I would carve the fruits in fancy shapes on top and tempered chocolate designs. 

What the contestants baked and judges thoughts:  

Tanner: Blueberry Banana Crunch Cake with banana curd, diplomat cream and pecan meringue. Bruno liked the flavours and Kyla liked his use of blueberry.

Maggie: Blackberry Lime Crunch Cake with blackberries, lime curd and candied almonds. Kyla says the meringue cuts more like cake but loves the curd. Bruno calls it tasty but the meringue soft.

Raufikat: Tropical Tang Crunch cake with coconut meringues, mango-pineapple curd and an isomalt flower. Kyla called her isomalt flower perfection. Bruno called the meringue perfect and that it blends well with the curd and the cream.

Mahathi: Ancient Aztec Crunch Cake with rice pudding, corn chips and pretzels and vanilla meringue. Kyla wanted a more refined look but loved the texture of the corn chips and pretzels. Bruno said Mahathi captured the Mexican spirit.

Up for Star Baker:  Raufikat, Tanner, Maggie and Mahathi

In danger of going home: No one really mentioned

Star Baker: Raufikat

Going Home: Maggie

We say good bye to Maggie.

Quick Thoughts: I think I am rooting for Raufikat to win. Raufikat has brought flavours that I love to her bakes and what I really love about her most is that fact that she helps the other bakers finish their bakes. What is not to love about that and this make Raufikat someone to root for to win season 4.
