The Great Canadian Baking Show Season 7 “Finale Week” Recap

At the end of Cake Week for season 7, I said that the final three would be Heather, Kathy and Loïc with my dark horses being Niv and Candice. The only person I predicted correctly was Loïc in the final three. Who knew that bad weeks did in Heather and Kathy. Camila actually started to pull away as a front runner in Week 2. I was wrong about Niv being my dark horse to go far but right about Candice. Can Candice win? I don’t know, she has been a bit up and down leading up to the finale and it will have to take bad bakes from Loïc and Camila for Candice to win.

Let us recap the finale to see who wins the coveted cake plate.

Signature Bake

The Bake: Diplomatic Cake

The Time: 2 hours

What I would bake: I am thinking my filling will be an Irish Cream creme diplomate. an Guinness soaked lady fingers and chocolate ganache filling.

What the contestants baked and judges thoughts:

As always, Camila is bring flavours that I like in her bakes and I definitely want to try hers. But I also like Candice’s too. I am not a huge fan of rhubarb but Loïc’s sounds nice.

  • Camila: Coffee and Caramel Torta Diplomatica made with Arequipe creme diplomat, coffee-soaked ladyfingers and candied hazelnuts. Both noted the droopy cream. Kyla noted the puff pastry needed more baking. Bruno called the taste divine. 
  • Candice: Apple Pie Torta Diplomatica made with apple pie filling, apple spice creme diplomat and whiskey-soaked ladyfingers. Kyla liked the lattice work on the puff pastry. Bruno liked the puff pastry calling it buttery. Kyla liked the texture of the ladyfingers. Bruno said everything was perfect except the creme diplomat.
  • Loïc: Backyard Torta Diplomatica made with apricot creme diplomate. rhubard-soaked ladyfingers and candied rhubarb. Bruno called it visually stunning and Kyla liked meringue. Bruno called the taste perfect and Kyla liked the rhubarb. However, Kyla wanted more soak with the ladyfingers.

The winner of the signature is Loïc. 

Technical Bake

The Bake: Passion Fruit Mille Crêpes Cake with an ombre look and wrap in a large crepe.

The Time: 2 hours and 30 minutes

How I would have fared: I’ve seen past versions of this show make a mille crêpes cake and it looked hard to make. So I think I can’t handle the delicate crêpes and also the ombre look. So I would definitely come last. 

Winner of the Finale Technical.

Showstopper

The Bake: Anti Gravity Cake

The Time: 4 hours and 30 minutes

What I would bake: I honestly don’t know what I would make. I’ve seen people do a stack of pancakes with a jug of syrup on top or I was thinking film canisters. My cakes would most like be chocolate of some sort.

What the contestants baked and judges thoughts:  

I am not really liking the sound of all three of these bakes.

  • Camila: Camila’s Life Story made with lemon poppyseed cake, elderflower buttercream and tempered chocolate. Kyla liked the illusion aspect of her showstopper. Bruno liked poppyseed cake but noted some bitterness. Kyla liked the lemon curd. 
  • Candice: Family Garden made with lemon gin buttercream, hibiscus jam and lemon basil cake. Bruno thought the her showstopper could have used a bit more finesse. Kyla called the cake flavourful and moist and she incorporated the gin well. Bruno love the jam and wanted more.
  • Loïc: Underwater Oasis made with hazelnut sponge, salmonberry jam, chocolate seaweed ganache and raspberry and lychee jelly. Both judges loved the look of the showstopper. Bruno liked the cake and Kyla said the flavour blended well. Bruno liked ganache. Both didn’t taste the seasweed at all. 

Up for the Season 7 Cake Plate: All three going through the pros and cons of each. From the comments, it sounds like it could be Candice because she did well in the technical and showstopper. But I wouldn’t surprised if it is Loïc’

The Winner of Season 7: Loïc

Quick Thoughts: It is surprising that Loïc won. He desired it as he was one of the front runners from episode 1. Camila and Candice didn’t quite do enough in the showstopper to win.

Next week is the holiday special that features four past winners vying to win their second cake plate.
