The Great Canadian Baking Show Season 4 “Finale” Recap

It is down to Raufikat, Tanner and Mahathi. None of these three have really dominated the season unlike past seasons so it hard to say who will win. I really would like Raufikat to win because she not only brings great flavours but also her big heart where she has been so helpful to other bakers that I want her to win.

Signature Bake

The Bake: An Ice Cream Bombe

The Time: 2 hours and 30 minutes

What I would bake: I would make a mango ice cream and green tea bombe with a coconut sponge. I’ve made a Baked Alaska before and this is sort of similar. I also had an ice cream maker that somehow was lost in various moves and I miss terribly as I’ve made tons of ice cream with it. 

What the contestants baked and judges thoughts:

I like Mahathi’s ice cream bombe as it has flavours that I love.

Tanner: Sophisticated Bombe with strawberry balsamic ripple and goat cheese ice cream and pistachio cake. Bruno like combination of the flavours. Kyla liked the density of the cake. 

Raufikat: Ice Cream Sunday Bombe with dark chocolate and cherry ripple ice cream an a chocolate Swiss roll. Raufikat’s bombe also melted. Kyla liked the neatness of the cake but called the ice cream very sweet especially the cherry one.

Mahathi: Pineapple Bombe with pineapple ice cream, lime ginger ice cream and rum cake. It has obviously melted but Bruno liked the sugar work and the pineapple ice cream. Kyla wanted more rum.

The signature goes to Tanner. 

Technical Bake

It is a few weeks too late but I made the Garden Dumplings this past weekend. Visit my baking blog for the results.

The Bake: Gateau St. Honore

The Time: 2 hours and 45 minutes.

Choux with Craquelin

How I would have fared: I’ve made choux pastry before successfully and I’ve also done craqueline recently. And I’ve also made a rough puff successfully too. The only thing is the chiboust cream required for the bake. Yes, very technical and if there was no time crunch, then I would do well but I know I would run out of time in making this. 

How the bakers did:

The signature went to Tanner and the Technical went to Mahathi. I think with that, Raufikat has taken herself out of the running to win this show unless she really impresses and I mean really impresses with the Showstopper.

Showstopper

The Bake: Treat Trolley with dessert of your dreams. Must include picturesque pie, 6 mini cakes, 6 viennoiserie pastries and 8 elegant cookies and all decorated. Total: 21 bakes. 

The Time: 4 hours and 30 minutes

What I would bake: I think my inspiration would come from the treat cart from Harry Potter. Canary Creams for the cookies (they would be shaped like canaries or could be macarons), bourbon pumpkin pie, mini cauldron cakes, and sherbet lemon danishes.

What the contestants baked and judges thoughts:  

Tanner: Symphony of Berries. The trolley will have blackberry opera cakes, Viennese Whirls, Mixed Berry Pie, and Blueberry Balsamic Danishes. Kyla liked the colours of the layers of the opera cake but Bruno said the blackberry was barely noticeable. Bruno and Kyla like the Viennese Whirls. Kyla wanted more flakes of the danish. Bruno loved the flavour of the pie and Kyla called it heaven on a plate. 

Raufikat: Sweet Wedding Dream. The trolley will have Chocolate Raspberry Macarons, Lemon Rose Battenberg Cake, Almond Jesuites, and Strawberry Mousse Pie. Kyla thinks the trolley is picture perfect. Bruno says the Battenberg is cooked to perfection and Kyla used the rosewater well. Bruno liked the crust of the pie and liked the mousse. Bruno noted the jesuit was a bit dry and dense. Kyla liked the shine on the filling and Bruno liked the tartness.

Mahathi: Around the World in 4 Bakes. The trolley will have Croatian Apple Walnut Cakes, Orange Blossom Madeleines, Kiwi Lime Danishes, and Ube and Coconut Cream Pie. Kyla likes the tie in with the theme. Bruno finds the madeleines dry. Both loved the apple taste of the cake. Kyla loved the colour of the pie and crust buttery. Bruno noted the pastry was overcooked but liked the custard.

With the showstopper, I think Raufikat might have just pulled it out of the bag as nothing too critical was made of her trolley. Let us see who is the winner.

Quick Thoughts:  So happy that Raufikat won. Her win brought tears to my eyes and everyone else too on the show. It is a shame that Raufikat’s family and even Tanner’s and Mahathi’s family couldn’t be here. Here is hoping for season 5 that the finale will look like past seasons with a big celebration with friends and family present. So this wraps up another season of blogging about The Great Canadian Baking Show. Until season 5, keep on baking.
