The Great Canadian Baking Show Season 7 “Old School Week” Recap

It is Old School week and curious to know what this means.

Signature Bake

The Bake: 10 Toaster Pastry

The Time: 2 hours

What I would bake: During the height of the pandemic, I made some of these and I do like eating the store-bought version too. The version I made was one filled raspberry jam.

What the contestants baked and judges thoughts:

I would definitely want to try Candice’s toaster pastry and maybe attempt to make my version of it.

  • Andrew: Chocolate Orange Stocking Stuffer with chocolate orange filling and Irish cream glaze. Bruno noted the pastry was under baked. It seemed that Kyla liked the flavour of the toaster pastry.
  • Camila: Mango Chamoy Toaster Pastry made with mango lime filling and chamoy glaze. Bruno liked the butteriness of the pastry and the tart the filling
  • Candice: Falling for Pumpkin Spice Toaster Pastry made with pumpkin pie filling and espresso glaze. Kyla called it fun but noted some open sides. Kyla enjoyed the pumpkin spice flavour but the pastry was under baked.
  • Heather: Weihnachsmarkt Toaster Pastry made with walnut prune filling, madeira wine icing and Lebkuchen spiced pastry. Bruno liked the piping and liked the sweetness of the dough. Kyla wanted more spice.
  • Kathy: Bologna for Breakfast Pastry made with pear, date and cambozola, maple drizzle and candied bologna. Kyla noted they looked uneven and the bake too. Kyla said the filling was a big mouthful. Bruno liked the candied bologna.
  • Loïc: Rad Mixtape Toaster Pastry made with orange cream filling and licorice fondant. Bruno called the looked playful. Kyla liked how the licorice played well with the pastry and filling.

Technical Bake

The Bake: Knafeh

The Time: 2 hours and 30 minutes

How I would have fared: I’ve never heard of this and hearing what is involved with this, I am pretty sure I will do very bad at this. I predict for myself that I would have been last.

Winner of the Technical Bake

How the bakers did:

  1. Andrew
  2. Heather
  3. Camilla
  4. Candice
  5. Kathy
  6. Loïc

Showstopper

The Bake: Kitsch Cake

The Time: 4 hours

What I would bake:

If it has to be two-tiered, one would be chocolate and the other a vanilla cake with a raspberry jam and vanilla buttercream.

What the contestants baked and judges thoughts:

Andrew’s cake sounds interesting. They are flavours that I like and will be interesting how well they play together. Candice’s cake also features flavours that I love. Camilla’s too has flavours that I enjoy.

  • Andrew: Nifty Shake Shoppe Kitsch Cake made with malted milk chocolate cake, root beer cake and cherry filling. Bruno said he captured the retro look. Bruno said the root beer cake tasted like a root beer float. Kyla said the malted milk gave the cake a creamy texture. Kyla noted both cakes were baked properly.
  • Camila: Break the Mold Kitsch Cake made with stout chocolate cake and Irish cream buttercream. Bruno noted the rush in the piping and liked the richness fo the stout cake but thought it was a bit boozy.
  • Candice: Night at the Opera Kitsch Cake made with coffee buttercream, chocolate ganache and almond cake. Kyla said the almond was present in her cake and she liked the decoration.
  • Heather: Forest of the Love Kitsch Cake made with marzipan fox, pistachio cake, sour cherry filling and chocolate cake. Bruno called the chocolate cake full of flavour and liked milkinest of the pistachio cake and how it played well with the sour cherry filling.
  • Kathy: Groovy 70’s Kitsch Cake made with cherry chip cake and lemon curd. Bruno noted the rush in the piping. Bruno liked the lemon and cherry filling but the cakes were gummy. Kyla wanted more cherry.
  • Loïc: Kitschiest of Birds Cake made with chocolate wine cake, hazelnut and pear frangipane and marzipan budgies. Kyla admired the piping work. Kyla liked how the wine brought out the flavour of the cake.

Star Baker for Old School Week

Up for Star Baker: Candice, Loïc and Heather

In danger of going home: Kathy, Andrew and Camilla

Star Baker: Loïc

Going Home: Kathy

Quick Thoughts: I am shocked that Kathy went home but it goes to show that it takes one bad week for you to leave despite having two star bakers. Andrew saved himself this week with a good signature and showstopper but if he doesn’t continue, he should be going home next. Kathy was one of my picks to be in the final three but now I don’t know who will be there anymore. Next week is spice week and it looks like things are getting spicy.
